Hi everyone,

We're coming to the end of summer holidays here and soon we'll be stepping into Autumn and thoughts of warming soups and comforting stews are starting to pop into my mind. I must admit, this is my favourite kind of cooking. So many dishes that can be easily doubled-up and batched to save time and energy later.

I'm working on some new series' for my YouTube channel, including recipes that are going to be competing for the 'Nap-worthy' badge 😴 To earn this, the recipes must save time and give us a little space in our busy lives, whether that's time for well deserved snooze or time to do one of the other million things so many of us are juggling. You can bet that Instant Pot will be involved here and maybe some other gadgets too. More soon.

We're also coming to the end of the #Team Water campaign now with just 2 days to go. Myself and huge numbers of YouTube creators have been working together to raise money for WaterAid throughout August. It has been an amazing month and we are so close to that goal of raising $40 million in a month to help provide clean water to 2 million people for decades.

I'm so close to my own little fundraising goal and thank you so much to those of you who have already donated and for those lovely messages. We home cooks are the best!

3 Quick Recipes

🍶 15 minute yogurt sauce - from Serious Eats. I haven't made this spinachy variation on raita with some extra spice yet but it looks so good! It's always good to have dip!

🌽 Instant Pot Corn on the Cob from Tried Tested and True. I often use my air fryer for corn on the cob but it can be a little dry if I get the timing wrong. For those end season or starting to shrink a little cobs, here's a simple method for cooking them in the Instant Pot (with or without their silky jackets). Cooking them under pressure always gives a moist result - just perfect with just a little mayo or your favourite topper.

🥪 Roast veg and whipped cottage cheese on toast - sometimes controversial but I do love Jamie Oliver recipes and this one is from the new book with a focus on more healthy food ideas. I'm looking forward to trying it out and will probably use the air fryer for this one.


2 Cooking Tips

🥣 I'm working on upping fermented foods in my meals and tempeh (fermented soy) is my current project. I don't love it right now but I often find that if I keep trying these pesky health foods, I start getting used to them and eventually even like them. With tempeh, I find it's much better when I give it a really good brown in some olive oil before adding to whatever I'm making. And a bonus tip from Nisha at Rainbow Plant Life is to add a little maple syrup to temper the bitterness. Onwards we go with that one.

🍝 If you are trying to eat more fibre rich foods, don't give up on wholegrain pasta if your first try is a little starchy or 'too worthy'. There are so many good dry pastas coming on the market now and it can be really worth putting on your detective hat and seeking out some higher quality versions. I am currently loving the wholewheat Spaghetti Integrali from Marks and Spencers. Light and with plenty of bite.


1 Moment of Calm

In shock I turn it on to a plate with a spatula. The bottom is burned, and the moment I remove it from the frying pan, it sinks even more in the middle. The gluggy mass spreads stickily out sideways. ‘Eww …?’ I break off a piece to try. It doesn’t taste at all like castella. This is glutinous and tough, like rubber. What did I do wrong? I can’t understand it. I thought I followed the recipe exactly. While chewing on an overly sweet, horrible lump, it suddenly strikes me as funny and I fall about laughing. I’m not devastated; if anything I feel good. What’s to cry about when I have a tidy apartment and a sink full of cooking utensils? I will not give up. I can learn how to do this thing.
