Coleslaw, Football and a Pizza Emergency

Hi everyone,

This week we are busy watching the football European Cup tournament and biting our nails as the England women's squad, the Lionesses, fumble, stumble but bravely fight as hard as they can to get through.

Last night we were having friends over to watch the England versus Sweden game, fully intending to keep it simple and pick up wood fired pizzas from a van that comes here on Thursdays BUT, at the very last minute, we realised the van wasn't there! We had very little in the house and there was no way I was cooking pizzas from scratch in the blazing heat, so I turned to an old trick for just such emergencies☺️.

I rushed to 0ur local corner shop, picked up as couple of basic frozen pizzas, mozzarella and some coleslaw. Then into the air fryer went some peppers and courgettes for a quick roast in olive oil. Out of the freezer came some caramelised onions I'd done as a big batch a few weeks ago. And it all went onto the shop bought pizzas, along with some of that amazing mozzarella. They turned out delicious and so quick! Job done! For an extra boost, I fancied up the insipid coleslaw too - see below for my tip on that one.

So like the Lionesses, we got a little creative, kept going and it all turned out well in the end. And England even won their game too. And that was also a little off-plan and a bit messy too. But they kept going anyway. There's a lesson in that somewhere.

Onwards Lionesses! And onwards for us home cooks too as we struggle through our own personal tournaments with courage, steadfastness, a good splash of olive oil and the occasional bloody nose ☺️

2 Cooking Tips

🥕 If you don't have time to make your own coleslaw and find the store bought ones just way too 'mayonnaisey', try this tip. Decant your store bought coleslaw into a bowl about twice the size - grate some carrots, shred some cabbage (or other veg you love) and combine these with the coleslaw. Now you'll have double the amount with only a little effort, a fresher slaw and a lot healthier too. If it needs loosening, try adding some yogurt. I often add in a heap of mixed seeds and sometimes even a handful of raisins. Is that wrong?

🍕 A basic margarita pizza in the freezer can be a great standby and you can dress up just as I did last night. There's no shame in that! If nothing else, try drizzling on some good extra virgin olive oil. It can brighten up even the plainest of pizzas and those gut bacteria love it too.


1 Moment of Calm

“One of the hardest games I've ever watched. Very emotional. We could have been out 4 or 5 times. When you're 2-0 down at half time it's not good. We started really bad on the game...and then we scored two goals so that was crazy already. Then we go into extra time, some players injured , some cramp, Hannah, blood all over the place and then we go into penalty shootout and then we miss a lot, but then they miss even more, and then we're through...I need to decompress I think
