Hi everyone,

I'm running a little late this week as we are still on that home renovation rollercoaster and we had some major hiccups this week. But, one day, hopefully just before the year turns, I will have a kitchen. I am so going to appreciate it!

I finally did manage to get my Turkey Ragu (aka bolognese) video completed this week and I just posted it. It's the first in my latest YouTube series, 'Freeze and Breathe' - calm and comforting food that's super quick to prep when you're having one of 'those days'. I love the pasta style recipes as I can make up a big batch of my 'pasta sauce ice cubes' and know that whenever I need something easy, I can just throw a couple of cubes in the Instant Pot, add some water and pasta and it's all done for me. So good! We all need these kinds of recipes in our lives. Do you have one?

2 Cooking Tips

🍗 If you are switching to lower fat meats like turkey for some dishes, you will likely notice straight away that there is less flavour when cooked as a straight switch with beef. I recommend thinking about the flavour boosters from last week's newsletter and it's also good to use a mix of both minced turkey thigh alongside the turkey breast if that's possible - the thigh has a higher fat content and it makes a big difference to the taste. I sometimes cook with 75% turkey mince and 25% beef to literally 'beef it up' too. It's always good to experiment!

🍄‍🟫 I'm noticing that many UK supermarkets are now stocking all kinds of mixed and wild mushrooms. They are so good but are also one of the most expensive things on those shelves so I am doing some detective work and keeping an eye on when they price drop them and grabbing a few yellow stickered tubs at once. It's so easy to finely chop them and add to pasta sauces, casseroles and soups so it's a no brainer if I can get a bargain. I'm also wondering about dehydrating my own one day but that will have to wait til I have a kitchen😊
